I had another day off today, so seeing as I have way to much time on my hands, I decided to bake some cupakes as I do love a bit of baking. These ones are vanilla and raspberry. Here is the recipe for them if anyone fancies taking a gander. I think they look pretty cute even if I do say so myself :)
Ingredients (Vanilla Sponge)

125g Plain flour
125g Caster Sugar
125g Butter
2 Eggs
1.5 tsp Vanilla Essence
1.5 tsp Baking Powder
Raspberry Buttercream Frosting
150g Unsalted butter (Room temperature)
150g Icing Sugar
2 tsp Pink food colouring
2 tbsp Raspberry Marshmallow Fluff (or just raspberry flavouring)
Sprinkles to decorate
1) Preheat the oven to 140
°C/Gas mark 2 to enable the cakes to rise slowly and evenly.
2) Cream the butter in a bowl.
3) Add the sugar and eggs and mix well.
4) Add the flour and baking powder to the butter mixture and mix until combined.
5) Add the vanilla extract for flavour and mix one last time.
6) Place your cupcake cases in the case tin and fill the case evenly. (About half full)
7) Place them in your pre-heated oven for 15-18 minutes
8) After 15 Minutes, check on your cupcakes by putting a skewer down through the centre of one of your cupcakes. If the skewer comes out clean then they are ready, if not leave them in the oven for a few more minutes and then check again. (Be sure not to check them to often as opening and closing the oven door to much can make the cakes sink if they re not fully cooked).
To Make the Frosting
1) Cream the butter in a bowl until smooth
2) Slowly add the icing sugar, one tbsp at a time and mix.
3) Add the 2 tbsp of Raspberry fluff and mix
4) Add the pink food colouring until you achieve the shade of your choice.
5) Pop the frosting into a piping bag with a large star tip and frost each cupcake starting from the outside in a swirl motion.
6) Add sprinkles of your choice.
